I mentioned my lifelong quest to recapture the breadsticks of my youth in a twitter thread the other day. I had several requests for the recipe, so I'm dusting off the old blog (uh, we may need to update some things...) to post it.
First thing, make your favorite thing crust pizza dough, I used Ken Forkish's Overnight Straight Pizza Dough recipe from Flour Water Salt Yeast (https://www.amazon.com/Flour-Water-Salt-Yeast-Fundamentals/dp/160774273X/) which I recommend for bread in general, lots of good theory and recipes in there.
Slap or roll out your dough as usual for pizza, spread olive oil over the top and sprinkle with salt and pepper. Bake at 475 for 10ish minutes (depends on the dough alot). While the dough cooks, melt 4 tablespoons butter and mix in 1 teaspoon of garlic powder and one teaspoon of onion powder. Immedietly after pulling the pizza out, brush on the butter mixture. Top with freshly grated parmesan. Cut into strips 1 inch thick and then cut againt on an angle to make smaller peices. Serve with blue cheese dressing.
That's it. They were super simple, but amazingly good. It is important you use a thin crust recipe, you want the crunchy crust on either side of this and not a lot of dough in between.
